説明

In a Working Kitchen, the Clock Is the Ingredient. A restaurant cook spends more than eight hours in the kitchen, and more than 320 of those minutes are spent in front of a knife and a cutting board. That is not craft; that is arithmetic. The Precision Slicer exists to move those minutes from preparation back into cooking, and it does it with a stainless steel body and an 850W copper motor built to run a full service rather than a single dinner.

The engineering choices are all about throughput and access. A widened feed inlet accepts larger cuts in a single pass, and the housing opens so the cutting assembly can be removed and cleaned without a technician. The motor is waterproof-sealed, which is the difference between a machine that survives a commercial wash-down and one that fails in month three. Capacity runs to 150kg per hour across strip, slice and dice geometry, so a single operator can push a day's prep through in one continuous session instead of a series of knife batches.

Blade selection is the operator's control. A 2.5mm blade turns product into the thin slices that hot pot and buffet service require; 3.5mm handles both raw and cooked meat; anything wider is for cooked product where structure matters more than thinness. The machine deliberately does not attempt cubes in one pass - it slices, then the slices are cut into strips - and that honesty about the process is why the results stay consistent. The cutting set is replaceable, and the whole unit runs on standard 110V or 220V supply.

This is not a gadget for the countertop. It is a production station with a knife edge inside.

Where It Belongs

The Precision Slicer is aimed at kitchens where prep volume is the constraint: hot pot and barbecue restaurants slicing against a fixed service time, buffet operations pushing hundreds of covers, butchers and deli counters preparing consistent portion thickness, and central kitchens producing cut vegetables for multiple outlets. It is equally useful in a farm-to-table operation processing its own livestock, or in a food production unit that has outgrown hand cutting but does not need a floor-standing industrial line. Because the blade set is interchangeable and the assembly lifts out for cleaning, one machine covers thin-slice service, cooked-meat prep and vegetable processing without a second unit on the bench.

Frequently Asked Questions

Q: Can it cut frozen meat?

No, and it is worth being precise about that. Frozen meat, bone-in meat and hard fruit will damage the cutting set. The machine is designed for uncooked fresh meat, cooked meat and vegetables. Chilling meat slightly firms it and improves slice consistency, but it should not be frozen solid.

Q: Which blade should I start with?

If you run hot pot or buffet service, start with 2.5mm, which produces the thin slices those formats need. If your output is mixed cooked and raw product, 3.5mm is the more versatile choice. Anything above 3.5mm is intended for cooked meat where you want structure preserved rather than maximum thinness.

Q: Does it produce cubes in one pass?

It does not, and no single-pass machine at this scale honestly does. The process is sequential: the machine slices, the slices are then cut into strips, and strips can be reduced further. That is why blade size selection matters - you choose the geometry at the first stage.

Q: How long does cleaning take between services?

The cutting assembly is removable and the motor housing is waterproof-sealed, so the machine can be opened, rinsed and reassembled as part of the normal end-of-service routine. Cleaning after every use is required, particularly after acidic products, to protect the cutting edge.

Q: Can I run it on a standard socket?

Yes. The unit runs on 110V or 220V supply at 850W, which is within the capacity of a normal commercial kitchen circuit. Confirm your regional voltage when ordering so the correct configuration is dispatched.

Bought the 3.5mm set as well

Started with 2.5mm for buffet service, then added 3.5mm for cooked meat. Being able to change the cutting geometry on the same machine is why I chose this over a single-blade unit. 19.5kg means it stays put on the bench.

Strong motor, learn the limits

It handles raw and cooked meat and vegetables easily, and the widened inlet means fewer re-feeds. Read the notes though - no frozen meat, no bone, no hard melon. Tried frozen product once and it complained immediately. Treat it right and it is a workhorse.

Built for a wash-down kitchen

The motor housing is sealed and the whole cutting assembly lifts out, so end-of-service cleaning takes five minutes. It has been through three months of daily commercial use with no issues. Stainless body still looks new.

Prep time cut by more than half

We do hot pot service and the 2.5mm blade gives us consistent paper-thin slices all night. One operator now pushes the day's prep through in a single sitting rather than in knife batches. The 150kg per hour figure is not marketing.
