Description

A kitchen is only as fast as its slowest step. Ask anyone who has worked a commercial line: the cooking is rarely the bottleneck. Prep is. Industry studies of restaurant kitchens place the average worker at more than eight hours on station, and over 320 minutes of that shift is spent with a knife in hand - slicing, stripping, dicing, portioning. Every minute at the board is a minute not spent on the pass, and on a busy Friday those minutes compound into tickets that never leave the rail. The Carvery exists to take that time back.

At its core sits an 850W copper-wound motor driving a hardened stainless blade through a widened feed inlet, a combination rated for 150 kilograms of throughput per hour. The body is stainless throughout, the working assembly lifts out in seconds for rinsing, and the motor housing is splash-sealed so that a wet cloth never becomes a hazard in a working kitchen. The same machine that reduces a case of onions to even dice will also take raw meat, cooked meat and vegetables without a platform change. Blades are interchangeable: a 2.5mm disc for the paper-thin sheets a hot pot service demands, 3.5mm for the all-rounder that handles both raw and cooked protein, and anything above that for firm cooked cuts where you want structure rather than shreds.

Repeatability is the real product here. A hand knife gives you a good slice on Monday and a different one on Tuesday, because human pressure drifts with fatigue and pace. A fixed blade gap gives you the same slice on the ten-thousandth repetition, which is exactly why multi-unit kitchens standardise on machines rather than on talent. The Carvery is a sequential cutter by design: it slices first, you re-feed the slices for strips, and you re-feed the strips for rough cubes. That deliberate two-stage rhythm is what keeps the cut clean on soft produce, and it is why the machine is honest about what it will not do. Frozen blocks, bone-in cuts and very hard melons stay out of the inlet. Everything else goes in, and goes in fast.

This is not a convenience. It is the difference between a prep station and a production line.

Application Scenarios

Built for the kitchen that serves volume without staffing a prep team of six. Hot pot and shabu-shabu houses use the 2.5mm disc to sheet proteins and vegetables to order. Delis and sandwich counters run the 3.5mm blade for consistency across hundreds of portions a day. Canteens, catering kitchens and meal-prep operations feed it whole cases of produce and get batch-identical dice. Small butcher counters use it to standardise portion weight before the scale, and hotel banqueting teams rely on it when a single event demands more mise en place than the line can produce by hand.

Frequently Asked Questions

Q: Can this machine cut frozen meat?

No. Frozen blocks, bone-in cuts and very hard melons will damage the blade edge. Thaw or temper the product first, and break hard fruit into pieces before feeding.

Q: Does it produce strips and cubes in a single pass?

No, and any machine that claims to is misleading you. The Carvery slices first. You then re-feed the slices to produce strips, and re-feed the strips to produce irregular cubes. Larger blade gauges give cleaner cubes.

Q: Which blade size should I order?

Choose 2.5mm for hot pot, shabu-shabu and buffets. Choose 3.5mm as the all-rounder for both raw and cooked meat. Choose 4mm and above for firm cooked cuts where you want structure rather than shreds.

Q: Is this a 110V or a 220V machine?

The build supports both. Select the variant that matches your local mains voltage before ordering, and confirm the supply at your site.

Q: How do I clean it after service?

Switch off and unplug, remove the cutting assembly and wash it with warm water and mild detergent. Wipe the body with a damp cloth. Never immerse the motor housing.

Q: What must never go into the feed inlet?

Frozen meat, anything with bone, and very hard fruit. Strongly acidic or alkaline foods also accelerate corrosion on the blade and should be avoided.

Built for volume

Catered a two hundred head event with it. The 150kg an hour figure is not marketing talk. We cleared a full day of mise en place in under an hour.

Powerful, but read the limits

Excellent for vegetables and cooked meat. I tried a frozen block once, against the warning, and the blade was not happy about it. Thaw first and it is flawless.

Consistent dice at last

Portion weights stopped drifting after we switched to this machine. The stainless body wipes down in seconds and the cutting assembly lifts out without tools.

Replaced two staff-hours of prep

We run a forty seat hot pot restaurant and the 2.5mm disc sheets the beef in a fraction of the time. The motor does not slow down even when we push a full case of onions through it.
